Alcoholic strength: 14%

Total acidity: 4,90‰

Total extract: 199,50 g/l

Residual sugar: 159,10 g/l

Reduced extract: 41,50 g/l

Grapes: 100% Moscato Bianco (from native clones)

Age of vineyards: 10-20 years

Production / ha: 25 hl/ha

Chalky, aeonic soil.

Density of plants: 2.500-4.500 plants/ha

Altitude of vineyards: 250-280 m

Exposure: South/West

 

 

Colour: amber.

 

Scent: characteristic of muscat, fruity with honey notes, intense and persistent.

 

Taste: sweet, but harmonic.

 

Keep in place cool and dry, in vertical position; to be preferably consumed by 6-8 years.

 

To be served at 15-16 °C in thin glasses;

To accompany with cakes filled with cream, medium-long seasoned cheese.

 

Cultivation at low environmental impact (Reg. CEE 2078), with grassy grounds; treatment with copper sulphate and sulphur in powder.

 

Cultivation: double rammed string

 

Winemaking:

hand collection with great care in grapes selection after their natural withering on the plant for about 20-30 days;

destemming, maceration on the peels at ambient temperature; racking and soft pressing;

fermentation at low temperature (15-18 °C).

Fermentation naturally stops because of high alcoholic strength reached (13-14,5 % alc./vol), therefore leaving a residual sugar varying from 120 to 160 g/l (according to the year, natural sugar contento of grapes changes). Then wine is decanted to remove dregs and most of yeats and bacteria and put in Slavonic oak tonneaux, where i twill have an ageing process of about 15-18 months; at the end of ageing, wine is bottled.
