CAREMA DOC RISERVA
Achille Milanesio, a young and independent winemaker from Piedmont, as the evolution of a family tradition that is generations old and deeply rooted in the territory of Carema, created 'Cantina Togliana' with the intention of recovering and qualitatively enhancing the mountain Nebbiolo, locally known as Picotendro.
A small vineyard with a unique terroir, cultivated with passion and a lot of hard work on the steep hills of Carema, a small village in Piedmont on the border with Valle d'Aosta, located 350 metres above sea level, where viticulture is practised exclusively by hand, taking advantage of the little space granted by nature, among dry stone walls and small vineyards trained on the pergola system, surrounded by woods and mountains.

The Carema Riserva of the Togliana Winery is a wine that comes from the oldest vines, over 40 years old, and from the selection of the best bunches of the native vine par excellence of Carema: Nebbiolo 'Picotendro'. The result is a wine of character with great structure that perfectly represents the exceptional characteristics of the terroir of origin: heroic agriculture.
The Nebbiolo grapes are harvested by hand, the bunches placed in small crates are taken to the cellar and mellowed in steel tanks where alcoholic fermentation, with indigenous yeasts, takes place for 12-15 days. Subsequently, the skins are submerged through a splint of poplar boards and there they remain in contact with the wine for a further 45-50 days. Malolactic fermentation takes place spontaneously in steel, always at a controlled temperature. Once the fermentation processes have been completed, the wine is racked into a French oak cask for ageing for at least 12 months, followed by refinement for at least another year in the bottle.
Colour: garnet red with garnet reflections
Aromas: intense and articulate citrus peel, pomegranate, wild herbs and spices.
Taste: energetic, structured, velvety and balanced, well-integrated tannins, juicy savoury and deep finish
Pairings: the right match for typical Canavese and Piedmontese dishes, mature cheeses
