TROCCOLONE Orcia Sangiovese D.O.C.

"Il Troccolone" stems from the desire to valorise the Sangiovese grapes from a single portion of the vineyard; which, vinified separately for several years now, always yielded a wine that was particularly interesting for its richness of aromas and freshness in drinking.

Why amphora: From the awareness of the potential of these grapes, a container was chosen that would allow fermentation, facilitating the wine's evolution and enhancing its original characteristics and varietal aromas.
Since the 2012 harvest, 5 hl terracotta amphorae have been used, made from Impruneta earth, produced by hand using the technique known as "a colombino" (without the use of moulds); the entire surface is left natural, without any glazing, vitrification or other intervention.

Harvesting: the grapes are harvested by hand and placed in small perforated baskets and taken to the cellar within a short time.
The first operation is the selection of the bunches of grapes, followed by destemming and sorting of the berries, which after soft-pressing go into the amphorae.

Vinification and ageing: in amphora, with the skins for 8 days, during which time, in view of the fermentation curve and polyphenolic extraction, manual punching-down is carried out.
After racking, which takes place by percolation, without pressing the marc, the flower must returns to the amphora, where it slowly completes alcoholic fermentation. Subsequently, with several racking operations, the lees are removed.
Both alcoholic and malolactic fermentation occur spontaneously: in the former, no dry yeasts are inoculated, in the latter, no lactic bacteria.
Bottled before malolactic fermentation is complete, 'Troccolone' soon becomes enjoyable and is suitable for drinking young.
