DOSAGGIO ZERO RISERVA



Cuvèe composed of equal parts Chardonnay and Pinot Noir:
the harvest takes place between the end of August and the beginning of September.
The whole Pinot Noir grapes are very lightly crushed while the Chardonnay grapes undergo the classic soft crushing.
The vinification of the crus takes place separately in concrete vats, and the blending takes place after the spring rest at the moment when the mousse begins.
After a
minimum ageing period of 60 months, disgorging and topping up takes place using the same wine.

Main characteristics:
Golden colour tending towards ochre, the nose has depth with principles of oxidative notes.
On the palate, minerality excellently accompanies structure and strength.

The Cherubini farm is located beyond the borders of eastern Franciacorta in the hills of a natural park, just a few kilometres from the centre of Brescia.


In this valley lies a terroir of millennial formation, with underground aquifers and rocks rich in limestone with a clay substratum. These soil characteristics combined with a constant light breeze and temperature ranges give the wines minerality and acidity typical of the terroir of production.


No conventional farming tools such as weedkillers or pesticides are used.


The winery's philosophy is to intervene as little as possible both in the vineyard and in the cellar: hence the decision to produce Spumante Metodo Classico a Dosaggio Zero, with only ageing in cement tanks that guarantee products with the maximum expression of the terroir of origin.
