The historic Acetaia di Canossa, dating back to the 17th century, is one of the oldest balsamic vinegar cellars in Emilia.

Over the years, it has celebrated the deep connection between the art of balsamic vinegar production and the legendary life of Countess Matilda of Canossa, whose spirit of strength and legacy still resonate in every drop of balsamic vinegar produced at the estate.

Today, the Acetaia di Canossa houses a collection of more than 400 small barrels, crafted from various types of wood. From juniper to oak, from cherry to ash, right through to chestnut, each little barrel imparts an unmistakable aroma to the vinegar it holds.

The ageing process and the transfer from one type of wood to another, in accordance with local regulations, give rise to a unique historical and gastronomic heritage embodied by Traditional Balsamic Vinegar and its condiments.
