Intense and deep ruby red colour, complex and elegant bouquet characterised by notes of very ripe red berries and spicy aromas. Balanced and soft in the mouth, with a very long aftertaste. A wine with a strong territorial imprint, it succeeds in expressing the elegance and complexity of the two grape varieties at the highest level.
Grapes: Sangiovese, Cabernet Sauvignon.
Soil: Pliocene origin, sedimentary formation characterised by the presence of yellow sands alternating with clays. Remarkable presence of marine fossils.
Microclimate: Temperate - warm: medium to high rainfall, cold winter and moderately warm to hot summer with particularly sunny sunsets, given the specific western exposure.
Row Exposure: South - West with North - South orientation of the rows.
Cultivation System: Soil tillage alternating with grassing and spurred cordon vine pruning. Thinning of bunches during growth and final selection at harvest; at harvest, the bunches are picked by hand, placed in small crates and sorted again on the conveyor belt.
Vinification: Maceration in steel vats at a controlled temperature of 26 - 28 °C for approx. 2 weeks. Malolactic fermentation completed.
Ageing: In medium-toasted French oak barriques of which 50% new for about 12 months, followed by finishing in bottle for at least 18 months.
Serving suggestions: In cooking, it goes well with grilled and baked meats and medium-aged cheeses.
Visual examination: Very intense and deep ruby red.
Olfactory examination: Of great olfactory complexity, notes of small red and black berries emerge, among which raspberry and black cherry notes stand out, well combined with vanilla and spicy notes reminiscent of tobacco and cocoa. With age, balsamic notes and hints of truffle emerge.
Gustative examination: Great structure and persistence, enveloping and elegant. The tannin texture is very dense, characterised by soft tannins. The finish is very long and the aftertaste intense and pleasant.
