A wine of great aromatic complexity, good balance and long aromatic persistence.
Blend of Sangiovese and Cabernet Sauvignon rounded off by Merlot, notes of red and black berries emerge, followed by mentholated and spicy notes, hints of nutmeg, liquorice and cinnamon stand out. Excellent structure, with a dense, consistent and elegant tannic texture.
Grapes: Sangiovese. Merlot, Cabernet Sauvignon.
Soil: Pliocene origin, sedimentary formation characterised by yellow sands alternating with clays. Remarkable presence of marine fossils.
Microclimate: Temperate - warm: medium to high rainfall, cold winters and hot summers with particularly sunny sunsets.
Row Exposure: South - West with North - South orientation of the rows.
Cultivation system: Soil tillage alternating with grassing and spurred cordon vine pruning with few spurs and a reduced load of buds per plant. Grape selection with thinning out during growth and selection at harvest; harvesting by hand, bunches placed in small crates and transferred to the cellar. A further selection of the bunches takes place via the conveyor belt at the time of crushing.
Vinification and ageing: Harvest when the fruit is clearly ripe.
Totally destemmed grapes, fermentation with indigenous yeasts in stainless steel at uncontrolled temperature for 15 days.
Maturation for about 6 months in used French oak barrels with medium toasting. Resting in bottle.
Recommended pairings: Game, grilled meats, medium-aged and mature cheeses.
Visual Examination: Ruby red with light purple tinge.
Olfactory Examination: Broad and harmonious bouquet. Floral notes emerge followed by hints of red berry fruits. Light spicy notes such as cinnamon and liquorice are perceived.
Gustative examination: Good structure, immediate. Round balanced with good persistence.
