RAISIN WINE OF PANTELLERIA DOC

The grapes harvested in the first ten days of August are laid out in the sun to dry for three to five weeks and then macerate with the fermenting must, in order to promote the transfer of fragrances, sugars and extractive substances.

PRODUCTION AREA: Island of Pantelleria.
VINE: Zibibbo.
SOIL: Volcanic-Sandy.
ALTITUDE: From 100 to 300 meters above sea level.
VINEYARDS: Vineyards bred to low tree to protect it from the winds.
PRUNING: Short spur pruning.
HARVEST: Manual, from the beginning of August for the drying of the grapes and from the beginning of September for the vinification.
VINIFICATION: Destemming and crushing with subsequent maceration of the dried grapes in fermentation.
AGING: In steel tanks and then in bottle.
TASTING:
Color: Deep golden yellow, tending to amber.
Bouquet: Ample notes of dates, raisins and acacia honey.
Taste: Sweet, soft and persistent.
SERVING TEMPERATURE: 12°-14° C.
SERVING SUGGESTIONS: Particularly suitable as a dessert or meditation wine, accompanied by dry pastries, seasoned and/or blue cheeses.
