ROSE’ DOSAGGIO ZERO



Pure Pinot Noir:
the grapes are destemmed and left to macerate for about six hours.
They are racked into cement vats and vinified spontaneously for about twenty days.
At the end of fermentation, it is racked again into a cement vat where it rests until frothing.
After a
minimum ageing period of 48 months, disgorging and topping up is carried out using the same wine.

Main characteristics:
Pale pink colour, excellent evolutionary and tertiary notes on the nose.
On the palate freshness and balance embrace the minerality very well.

The Cherubini farm is located beyond the borders of eastern Franciacorta in the hills of a natural park, just a few kilometres from the centre of Brescia.


In this valley lies a terroir of millennial formation, with underground aquifers and rocks rich in limestone with a clay substratum. These soil characteristics combined with a constant light breeze and temperature ranges give the wines minerality and acidity typical of the terroir of production.


No conventional farming tools such as weedkillers or pesticides are used.


The winery's philosophy is to intervene as little as possible both in the vineyard and in the cellar: hence the decision to produce Spumante Metodo Classico a Dosaggio Zero, with only ageing in cement tanks that guarantee products with the maximum expression of the terroir of origin.
