The desire to try their hand at producing artisanal wines using historic and indigenous grape varieties is one of the reasons that led the winery to produce this Trebbiano.
The grapes from the winery's oldest vineyard are harvested by hand in September, then crushed and pressed to obtain the must for vinification.
Alcoholic fermentation occurs spontaneously thanks to indigenous yeasts through the preparation of a “pied de cuve”, created by selecting the ripest grapes before harvesting.
Since 2018, Trebbiano Fosso Cancelli has been vinified and aged partly in terracotta amphorae and partly in Slavonian oak barrels.CIATR22
