Fosso Cancelli

Fosso Cancelli was created in 2007 from a strong desire to produce a wine of great craftsmanship and tradition. This wine reflects the ancient soul of the winery and captures a well-defined historical period that shaped the history of Montepulciano d'Abruzzo: fermentation in concrete.
The name refers to the ditch that borders the vineyards where the Montepulciano grapes are selected and harvested. These are the oldest vineyards on the Loreto Aprutino estate and are featured on the label to emphasise the strong link with the territory.
After being harvested by hand, the grapes are pressed in the old press and the must is transferred to cement tanks. Fermentation occurs spontaneously with indigenous yeasts without temperature control. At the end of fermentation, the wine is racked and the new wine obtained is left to rest for 1 year in the concrete tanks where it fermented. The wine is then bottled and remains in ageing for at least 3 years.
