Grape variety: Cabernet Sauvignon 80%, Cabernet Franc 20%.

Soil composition: Medium-textured soil with presence of skeleton of alluvial origin.

Training system: Guyot

Harvest period: September

Vinification: Manual harvesting in perforated boxes, gentle pressing of whole grapes, traditional fermentation 20-25 days at controlled temperature.

Ageing: 15 months in oak barrels then in bottle.

Organoleptic characteristics:

very intense ruby red colour;
aromas of black berry fruit, hints of spices and vanilla, wine of great complexity;
mineral notes on the palate, savoury, harmonious with elegant and refined tannins, wine of great structure with a long and very persistent finish.

Food pairings: first and second courses based on game, wild boar, roasts and mature cheeses.
