Grape variety: Merlot 100%

Soil composition: Medium-textured soil with presence of skeleton of alluvial origin.

Training system: Guyot

Harvest period: September

Vinification: Manual harvesting in perforated boxes, gentle pressing of whole grapes, traditional fermentation 20-25 days at controlled temperature.

Ageing: 15 months in oak barrels then in bottle.

Organoleptic characteristics:

very intense ruby red colour;
aromas of ripe and sweet black berry fruit, balsamic hints of Mediterranean scrub, wine of great complexity;
On the palate it is soft, round, the sweetness of the fruit emerges, savoury, harmonious with a dense and silky tannic texture, a wine of great structure with a broad and very persistent finish.

Food pairings: first and second courses based on game, wild boar, roasts and mature cheeses. Meditation wine.
