Classic Method Red Sparkling Wine
GRAPEVINE
Sangiovese 40%, Ciliegiolo 60%.
VINIFICATION:
maceration in the press on the skins for about 6 hours, alcoholic fermentation at controlled temperature in cement vats.
MATURATION:
Second fermentation in the bottle with maturation on the lees for at least 30 months (maximum internal pressure of approx. 4.9 bar). Maturation in bottle for 4 months after disgorging.
ORGANOLEPTIC NOTES:
Brilliant ruby red colour, light and silky perlage due to the reduced pressure in the bottle.
Intense and elegant bouquet with notes of cherry and red fruits combined with fragrances of citrus fruits and spices.
Ripe red fruit on the palate, excellent structure and acidity.
PAIRINGS:
perfect at the end of a meal with desserts and cheeses. Excellent as an aperitif.
