Wine name: Vinsanto di Frascole
First year of production: 1993
Vineyard description: Clayey soil, originated from decomposition of Marne di Vicchio (marl and clayey marl) with insertion of thin aground layers.
Conducted in organic agriculture since 1999.
Exposure of vineyard: south, south - west
Altitude: 400 mt on sea level.
Cultivation: rammed string
Year of plantation: 1967 and 1970
Density of plantation: 2800 plants/ha
Varieties: Trebbiano and Malvasia Bianca, old vineyards clones are unknown.
Grapes: Trebbiano and Malvasia Bianca.
Wine making: Collection of grapes, completely handmade, starts at half September. The harvest is put in small boxes containing about 8 Kg of grapes each. Grapes are hung to vertical metal frames set in the withering room, provided of wide openings and set in an airy and dry place. Here grapes remain till the first days of March.
In the first week of March grapes are moved from frames and pressed in a traditional press.
Must, put in small chestnut wood kegs, by about 40 and 80 lt, matures for over 9 years.
Later Vinsanto is removed from kegs and bottled without any filtration.
Mains analytical datas: Alcohol: 13% - 14%
Residual sugar: 230 - 280 g/litre — Total acidity: 6,50 - 7,80 gr/ litre — Total dry extract: 220,00 - 250,00 gr/litre.
