Description of the vineyards: clay loam soils, originating from the decomposition of Vicchio marl (marl and clayey marl) with thin layers of sandstone interspersed. Organically farmed since 1999.
Altitude: 400-500 metres above sea level.
Vineyard exposure: south, south-west
Training system: spurred cordon
Vinification technique: the grapes are harvested entirely by hand, around 15 October for Sangiovese and a few days later for Colorino.
The vineyard is harvested in two or more passes, choosing the areas with the most uniform ripeness and using small crates that hold about 15 kg of grapes each.
The grapes arrive at the winery on the terrace overlooking the vinification area, are fed into the destemmer-crusher, and by the force of gravity alone enter the 20 hl truncated cone-shaped oak vats inside the winery itself and open tonneaux or small concrete tanks for the Colorino.
Here, fermentation takes place at a temperature not exceeding 28-30 degrees Celsius and in contact with the skins for about 30-40 days.
After racking, the wine is transferred to 225-litre barriques and 350-litre tonneaux for malolactic fermentation, where it remains for several months.
It is then blended in concrete tanks and bottled after about 3-4 months.
It is aged in the bottle for at least a year before being released for sale.
