Site:
The cru site "San Leonardo" in the village of Cormons.
Vinification:
Separate harvesting and crushing followed by blending of the musts which then ferment together, creating integration and balance of the component varieties.
Grape varieties:
Chardonnay, Pinot Grigio and other grape varieties.
Tasting Note:
Nose: varietal characters enriched by more complex aromas with notes of wild flowers and aromatic herbs and a finish which recalls acacia honey.
Palate: rich and concentrated structure, but at the same time with inviting drinkability. Soft with great volume on the palate and elegant contrast between the buttery character and underlying mineral quality.
Appearance: straw yellow.
Food matches:
A natural match for appetisers, soups and first courses, especially rice and pasta. Also excellent with shellfish and fish in general.
Serving temperature 12-14 °C.

First produced in 1989, this incredible wine is the symbol of the winery, and it truly epitomizes Bolgheri.
At first, the wine was a classic Bordeaux blend but became a Cabernet Franc monovarietal in 2001; since then, it has been a huge success.
The name “paleo” refers to a wild herb found on the Tuscan coast, and it symbolizes a strong local identity and the will to reach all goals.

The Zuc di Volpe line, the jewel in the crown of Volpe Pasini production, is produced only in the best years by selecting the richest grapes, which are vinified separately with the aim of achieving the highest level of typicality, concentration and elegance.

Each peach is carved from an only piece of White Carrara marble, sculpted and hand painted with pigments of natural origin and bee wax, using the same methods of Michelangelo age.
Each fruit is made unique by small irregularities of shape and colour.
The Riserva is only made in exceptionally good years with the best Sangiovese selected from the estate’s oldest vineyards so in this sense we might well describe the Riserva as our “Grand Cru”. Like our other wines, the Riserva has great ageing potential, improving considerably over the years to express the quintessential features of Chianti-grown Sangiovese: minerality, fresh fruit and outstanding elegance.
