A sweet wine made from 90% Malvasia and 10% Trebbiano grapes, harvested and selected by hand, then left to dry naturally on racks for around 4 months in well-ventilated rooms.
The must obtained after gentle pressing is decanted into small oak and chestnut barrels, sealed and placed in rooms subject to normal seasonal temperature fluctuations. In these barrels, the must ferments and undergoes a slow maturation process for 6 years, reducing the initial volume by more than a third through natural evaporation.
Upon bottling, the wine undergoes light filtration and is left to age in the bottle for at least 18 months, without the addition of sulphites.
Vin San Giusto is a passito wine suitable for very long ageing, to be enjoyed at a temperature of 10°C.
Golden amber colour.
Intense and penetrating on the nose, with notes of fruit jam, chestnut honey and dried fruit.
An enveloping, sweet and rounded palate, well-balanced in freshness, with a rich, complex aftertaste and exceptional length.
A meditation wine that pairs very well with dry pastries, mature cheeses and blue cheeses.
