The Riserva version of Montefalco Rosso, vinified only in the best vintages with long ageing in large casks. A blend based only on Sangiovese and the typical Montefalco grapes.
First year of production: 1998.
Harvest
Starts with the Sangiovese at the end of September and continues with the other varieties. Harvested by hand.
Vinification
Filling the maceration tanks by gravity. Fermentation on the skins with maceration for approximately 3-4 weeks.
Ageing
Assemblage and maturation for at least 18 months in mainly large oak casks and then in cement vats. Maturation in bottles for at least 6 months.
Tasting
Deep ruby red colour. Very intense and complex olfactory impact with fruity, floral and spicy scents. Structured and elegant on the palate, with a remarkable taste-olfactory persistence.
Pairings
Savoury first courses; grilled meats, roasts; mature hard cheeses.
Optimum period of consumption
It is a wine that reaches full maturity 4-5 years after the harvest and can be matured in the bottle for over 15 years.
