Harvest
Generally mid-October. Manual grape harvest.
Vinification
Gravity filling of the tanks, fermentation on the skins with maceration for 25-40 days. Spontaneous clarification without filtration.
Ageing
Maturation takes place in mainly large oak casks for at least 18 months. Maturation in cement vats before bottling.
Tasting
Intense ruby red colour. Rich and powerful nose, ethereal and complex. Typically characterised by notes of fruit and herbs, where citrus, cherry, berries, mint and oregano stand out. On the palate it is a very structured wine with firm and persistent tannins. A wine that expresses itself best with long ageing in the bottle.
Pairings
Accompanies grills and roasts, braised or stewed red meats, game and hard mature cheeses.
Optimal period of consumption
Montefalco Sagrantino generally reaches full maturity 10-15 years after the harvest and can age in the bottle for over 30 years.
