Franciacorta DOCG CABOCHON BRUT FUORISERIE N° 025
The Cabochon constellation was born from a desire: the search, begun in 1985, for a more careful selection of the crus of the Monte Rossa hill and a new vinification system that introduced barriques for the first fermentation of the must. Cabochon is the culmination of an exciting and virtuous journey, a desire that, combined with determination, has been transformed into a brilliant firmament.
FUORISERIE N° 026 has a straw yellow colour with bright gold reflections and a very fine, persistent perlage. The nose reveals notes of white flowers and ripe yellow fruit with hints of chamomile. The palate is full and persistent, with good minerality and a slight toasted note.
Production area: Franciacorta DOCG, morainic hills of the municipalities of Bornato and Brescia.
Microclimate: the Monte Rossa hill is part of the crown of hills south of Lake
Iseo that mark the beginning of the subalpine zone and separate the lake from the Po Valley. The vineyards are located in the area where air currents develop due to the thermal exchanges between the plain and Lake Iseo.
Cru: Pratone, Barek, Brolo, Palo, Nespoli.
Soil structure: glacial moraine.
Grape varieties used: Chardonnay 70%, Pinot Noir 30%.
Cuvée: 80% wines from historic crus and 20% reserve wine.
Training system: spurred cordon 70 cm above ground, Guyot.
Planting density: 2 x 1 m.
Planting density: 5,000 plants/ha.
Average age of vines: 24 years.
Average grape yield per hectare: max 85 quintals per hectare.
Grape selection: in the vineyard with manual harvesting in crates.
Vinification: soft pressing of the grapes with selection of the best part of the
grapes for no more than 48% of the yield. Each cru is vinified separately.
Fermentation: in 250-litre oak barrels between September and February.
Ageing in bottle: over 40 months.
