Franciacorta DOCG CABOCHON ROSÉ BRUT FUORISERIE N° 08
The Cabochon constellation was born from a desire: the search, begun in 1985, for a more careful selection of the crus of the Monte Rossa hill and a new vinification system that introduced barriques for the first fermentation of the must. Cabochon is the culmination of an exciting and virtuous journey, a desire that, combined with determination, has been transformed into a brilliant firmament.
FUORISERIE N° 08 has a pastel pink colour like a rose petal.
The nose has an almost vegetal touch, reminiscent of yellow peach and bringing to mind a hint of peony. It is subtle but long, with a balsamic and spicy finish of white pepper.
On the palate, it immediately reveals its compactness and digestibility. It is fresh and crisp, with a slightly salty finish and a hint of clementine.
Production area: Franciacorta DOCG, morainic hills of the municipalities of Bornato and Brescia.
Microclimate: the Monte Rossa hill is part of the crown of hills south of Lake
Iseo that mark the beginning of the subalpine zone and separate the lake from the Po Valley. The vineyards are located in the area where air currents develop due to the thermal exchanges between the plain and Lake Iseo.
Cru: Pratone, Barek, Brolo, Palo, Nespoli.
Soil structure: glacial moraine.
Grape varieties used: Chardonnay 54%, Pinot Noir 46%.
Cuvée: 80% wines from historic crus and 20% reserve wine.
Training system: spurred cordon 70 cm above ground, Guyot.
Planting density: 2 x 1 m.
Planting density: 5,000 plants/ha.
Average age of vines: 20 years.
Average grape yield per hectare: max 85 quintals per hectare.
Grape selection: in the vineyard with manual harvesting in crates.
Vinification: soft pressing of the grapes with selection of the best part of the
grapes for no more than 48% of the yield. Each cru is vinified separately.
Fermentation: in steel and oak barrels.
Ageing in bottle: over 40 months.
