Franciacorta DOCG SANSEVÉ SATÈN BRUT

Satèn is a registered name of the Franciacorta Consortium and corresponds to a production protocol involving the exclusive use of white grapes, an atmospheric pressure of less than 4.5 atmospheres, a maximum sugar content of of 12 grams/litre and a minimum ageing on the lees of 24 months. The combination of these four elements results in a soft and enveloping wine that evokes the pleasantness of silk.

Organoleptic characteristics: brilliant green-gold colour; citrusy cedar nose with iodine and brackish nuances. Closure of green olive and hints of wild rose. Taut mouthfeel with dense, compact and elegant bubbles. Salty, pink grapefruit finish. Impressive for its intense closure and mouthwatering drinkability.

Area of production: Franciacorta Docg, Morainique Hills around the villages of Bornato, Brescia, Cazzago San Martino, Passirano, Adro, Iseo, Rodengo Saiano.

Crus: 22 cru spread over 78 hectares of vineyards strategically distributed

over the territory of Franciacorta.

Soil structure: glacial moraine in the hilly area Monte Rossa, plus some soils sandy

and clayey soils.

Grape varieties: 100% Chardonnay

Cuvée: 80% wines obtained from Chardonnay from our best crus and 20% wine reserve Chardonnay.

Training system: spurred cordon 70 cm above the ground, guyot.

Planting layouts: 2x1 m

Planting density: 5,000 plants/ha

Average age of the vines: 18 years.

Average grape yield per hectar: max 95 quintals per hectar.

Selection of grapes: On the vines by manual grape harvesting in boxes.

Vinification: soft pressing of grapes selecting their best part for no more than 55% of yield.

Fermentation: part of it is fermented in steel tubs kept at controlled temperature and part of it in oak barrels.

Refining in bottle: more than 24 months.
