Franciacorta DOCG CABOCHON BRUT 2016
The Cabochon constellation was born from a desire: the search, begun in 1985, for a more careful selection of the crus of the Monte Rossa hill and a new vinification system that introduced barriques for the first fermentation of the must. Cabochon is the culmination of an exciting and virtuous journey, a desire that, combined with determination, has been transformed into a brilliant firmament.
Cabochon Brut 2016 is the vintage Brut of the Cabochon family.
Golden yellow in colour, with a fine and persistent perlage.
The nose reveals hints of hazelnut, pastry, sultanas, and light notes of coffee and toast.
On the palate, it is a full-bodied and generous wine, with great complexity, well-balanced, with an acidic and salty finish characterised by notes of exotic fruit.
Production area: Franciacorta DOCG, morainic hills of the municipalities of Bornato and Brescia.
Microclimate: the Monte Rossa hill is part of the crown of hills south of Lake Iseo that mark the beginning of the subalpine zone and separate the lake from the Po Valley. The vineyards are located in the area where air currents develop due to the thermal exchanges between the plain and Lake Iseo.

Grape selection: in the vineyard with manual harvesting in crates.
Vinification: soft pressing of the grapes with selection of the best part of the
grapes for no more than 48% of the yield. Each cru is vinified separately.
Fermentation: in 250-litre oak barrels between September and February.
Ageing in bottle: over 54 months.
