Description of the year 2006
2006 was characterised by alternating rain and sun during the months of April to June, ideal for the development of the vegetation of the vines. The next season brought a very hot and sunny July, while August was less hot than usual with some rain. The first half of September, very hot and sunny, assured the definitive evolution of the grapes to a complete and balanced ripeness. The second half of September began with some rain but the weather quickly became nice again and permitted complete ripeness by the end of the month. For the Sanlorenzo vineyards it was an exceptional year. The harvest took place on the days of 4-5 October.
Grape: 100% Sangiovese
Harvest: the slightly late harvest of these grapes results in a very fruity wine with significant body. The grapes are harvested by hand.
Vinification: in the cantina, after a light pressing of the bunches, fermentation takes place for 25 days in steel vats at controlled temperatures, where the wine is subject to periodic pumping up and dèlastage.
Aging: the wine is refined together with the lees, in vats that have an average capacity of 30-35 hectolitres sothat an optimum equilibrium is achieved. Before being placed on the market the wine undergoes an ulterior 4-month refinement in the bottle.
Characteristics: dark garnet red, with a generous nose, it has aromas of dried flowers, spices, and ripe fruits. It finishes long.
Combinations: A very good accompaniment for game, beef, and seasoned pecorino cheese.
