Production area: Carmignano (PO)
Exposure and altitude: east-south/west; 200 m a.s.l.
Grape varieties: sangiovese, cabernet sauvignon
Soil composition: limestone, galestro and alberese.
Harvest: sangiovese from mid-September and cabernet first week of October
Vinification: in steel tanks, 7 days of alcoholic fermentation followed by a further 13 days of maceration with the skins before racking, at a temperature of 26/28°C.
Malolactic fermentation: French oak tonneaux
Ageing: 50% in tonneaux for at least 12 months, 50% in large casks for 16 months
Ageing: in bottle for at least 12 months
Colour: intense ruby red
Nose: fruity notes of cherry and blackberry, combined with pleasant hints of spice and leather
Taste: soft and fresh, with a perfect balance between tannins and acidity, and a
complex aftertaste with a long persistence tending towards sweet liquorice.
Gastronomy: goes well with all meats in general and cheeses
Serving recommendations: Serve at 18°-19°C.
