Exposure and altitude: south 150 m a.s.l.
Grape varieties: Sangiovese 100%
Soil composition: silty and clayey schist
Harvest: second half of September
Vinification: in steel tanks, 7 days of alcoholic fermentation followed by a further 13 days of maceration with the skins before racking, at a temperature of 26/28°C.
Malolactic fermentation: in new French oak barriques
Ageing: 18 months in new barriques
Ageing: in bottle for at least 12 months
Colour: ruby red
Bouquet: intense, elegant, persistent, fruity with spicy and floral notes, violet and tobacco
Taste: elegant and refined with persistent spicy notes. Red fruit, mint and light vanilla.
Silky tannin, enveloping and well balanced. Long aftertaste.
Gastronomy: goes well with all meats in general and cheeses
Serving recommendations: Serve at 18°-19°C.
