Production area: Carmignano (PO)
Exposure and altitude: south - south/west; 200 m a.s.l.
Grape varieties: cabernet sauvignon, merlot and syrah
Soil composition: clayey schist
Harvest: merlot early September, syrah late September and cabernet early October
Vinification: in steel tanks, 7 days of alcoholic fermentation followed by a further 13 days of maceration with the skins before racking, at a temperature of 26/28°C.
Malolactic fermentation: in barriques
Ageing: 18 months in barriques
Ageing: in bottle for at least 12 months
Colour: very intense, almost impenetrable ruby red
Nose: broad, complex, elegant, fine, sweet, fruity with intense spicy notes.
Taste: soft, structured, opulent, with dense and sweet tannin, acidity in balance with the structure, fat and density of the wine. Long, persistent, fruity aftertaste with taste sensations of small red berries from the undergrowth married to intense and complex spicy notes.
Gastronomy: goes well with all meats in general and cheeses
Serving recommendations: Serve at 18°-19°C.
