It is produced in small quantities from Trebbiano and San Colombano grapes, chosen from the ripest vines registered in the Carmignano Register and left to dry on mats until February, according to the traditional method.
The must is then placed in kegs for about seven years.
The yield is very low: 1/4 to 1/5 of the original weight of the grapes.
After bottling, the Vinsanto can be aged without time limit, still gaining in richness and aroma.

Exposure and altitude: east 100-150 m a.s.l.
Grape varieties: Trebbiano, San Colombano
Soil composition: clayey schist
Harvest: from mid-September to the first week of October
Vinification: natural drying of the grapes until January-February of the year following the harvest.
Traditional vinification in small barrels placed under roof.
Alcoholic fermentation takes place in the spring months.
Ageing: in chestnut, cherry and oak casks for about 7 years
Ageing: in bottle for at least 3 months
Colour: amber-coloured
Aroma: intense of candied fruit, apricot, orange peel, dried fig and honey
Taste: perfect balance between sweetness and freshness, with a long persistent finish.
Gastronomy: goes well with biscuits, all Tuscan desserts, blue cheeses, liver pâté. Ideal meditation wine.
Serving recommendations: serve at 16°-18°C.
