Production area: Carmignano (PO)
Exposure and altitude: south - south/west - south/east; 150 - 200 m a.s.l.
Grape varieties: sangiovese, cabernet sauvignon, cabernet franc and canaiolo
Soil composition: chaotic complex, silt and clay with good
presence of skeleton such as alberese and galestro.
Harvest: sangiovese from mid-September, cabernet first week in October
Vinification: in steel vats, 7 days of alcoholic fermentation followed by a further 8 days of maceration with the skins before racking, at a temperature of 26°/28°C.
Malolactic fermentation: carried out in steel
Ageing: 24 hl Allier barrels for 6-8 months
Ageing: in bottle for about 3 months
Colour: intense ruby-violet red
Nose: sweet, broad, fine, very intense, fruity, with slight hints of oak
Taste: soft, voluminous, broad with medium-density sweet tannin in great balance with acidity, fruity and persistent aftertaste
Gastronomy: goes well with first courses in general, white and red meats.
Serving recommendations: Serve at 18° - 19°C.
